Martín has worked in different countries and kitchens around the world. He took specialized courses at the renowned École Lenôtre in Paris, and has also studied under Albert Adrià and Argentinian Chef Gato Dumas, both innovators and pioneers of contemporary and modern cuisine. He also worked with Michelin Guide Star Koldo Royo, and others respected chefs. Since he was very young he showed passion for cooking, and would help his family in the kitchen, and at the same time taught himself by reading books and doing research. Influenced by his travels and experiences, he now manages the creative processes of his Culinary Group Cincosentidos, which group together the restaurants Cocina Abierta, Nonna and Touro. He is currently immersed in the development of the Atelier; a project he holds dear to his heart. He is completely dedicated to Italian cuisine, while fusing it with his native cooking. Along with his wife, Lourdes Rodríguez, they created El Catorce in San Juan, one of the first closed-door restaurants in Puerto Rico.

Chef Correa has literally been in the kitchen for 17 years. He began his culinary journey as Kitchen Supervisor at the Marriott Hotel and Casino. He worked his way up quickly through the ranks to Executive Chef at some of the finest hotels in Puerto Rico, including the legendary Normandie Hotel, thanks to his strong leadership skills and excellent ability to work as part of a team. His knowledge of local and international cuisine as well as every aspect of kitchen operation and restaurant management made him a top consultant at Boutique Cuisine Catering and Kitchen Management from 2009-2011. In 2011, he also became Chef-Instructor at Puerto Rico’s renowned Escuela Hotelera, until taking over the culinary operations of the San Juan Water Beach Club Hotel as Executive Chef. Mr. Correa was also the 2008 Cattlemen’s Chef Challenge Champion.

After completing his degree in industrial psychology he decided to follow his passion, a career in the culinary industry. From 2002 to 2013 he owned The Fresh Grill restaurant in Hato Rey, where he offered light lunches and a tapas menu. In 2012 he became Salt Gastrobar Executive Chef, and in 2014 joined forces with Ariel Pertusi and Néstor Canel to open Avocado restaurant, where as Executive Chef and co-owner, they present a new and creative meaning to local food.

Known for his passion for food and pride for his Puerto Rican culinary roots, he is one of the founders and actual president of AGPR (Asociación Gastronómica Puertorriqueña), a gastronomic movement focused on creating links among the different divisions of our local gastronomy. He enrolled in the University of Puerto Rico in Río Piedras to study Journalism, but thanks to his passion he continued his studies in one of the nation’s most prestigious culinary schools, Johnson and Wales University, Miami Campus, completing an Associate’s Degree in Culinary Arts. Later, he finished his training with renowned Chef Ángel Palacios in Barcelona, Spain. After more than 20 years working in kitchens, Pacheco decided to open a new restaurant with his friend and partner, Luis David Rodriguez, La Jaquita Baya in Miramar, Puerto Rico. Pacheco has represented our local cuisine in Washington, Miami, New York, Costa Rica, St. Thomas and Colombia.

A constant culinary investigator, she has grown within the local culinary industry working in different restaurants around the Island such as Lenel, La Marketa, Gallo Negro and Bodega Las Tablas. Mrs. Escobar currently work as Sous Chef at Cocina Abierta in Condado, Puerto Rico.
